The application scope of food-grade cellulose ethers is constantly expanding, such as the field of plant-based artificial meat. According to the concept and manufacturing process of artificial meat, artificial meat can be divided into plant meat and cultured meat. At present, the market has mature plant meat manufacturing technology, and cultured meat manufacturing is still in the laboratory research stage and cannot achieve large-scale commercial production. Compared with natural meat, artificial meat can avoid the problem of high saturated fat, trans fat and cholesterol content in meat food, and its production process can save more resources and reduce greenhouse gas emissions. In recent years, with the improvement of raw material selection and processing technology, new plant protein meat has a strong fiber feel, and the taste and texture are greatly reduced compared with real meat, which is conducive to improving consumers' acceptance of artificial meat.
